Halloumi cauliflower rice

This was a pretty quick and easy dish, and definitely a good healthy option. The only issue with cooking it was that the spinach took a really long time to wilt! I really enjoyed it, though only 1 of my 3 teens did.

We did feel it was a little on the dry side, so I mixed a couple of tablespoons of Greek yoghurt with a teaspoon of mango chutney to dollop on top, which worked well.
