So here we are, Chorizo and Butter bean stew but I enhanced it. I added half a red pepper, a red chilli, half a red onion, 2 cloves of garlic and a chicken stock cube diluted in 200ml of water. All red for a single persons valentine meal ๐.
As you can see this made quiet a lot for a two person recipe, I would say probably enough for three with sides, salad, patatas bravas or even some warm, crusty bread.
I also made my own pesto as it it's sooooo easy.
Blitz together 3 garlic cloves, 50g grano padano, 30g fresh basil, a grind or two of black pepper and a 125ml olive oil.
I didn't have a side so my whole stew and pesto came in at 535 kcal for the stew and around 75 kcal for the pesto.
